1 C Tigernut Flour
1/3 C Coconut Flour
1/4 C Carob Powder
1 tsp baking soda
1 tsp baking powder
1 tsp cinnamon
1 tsp vanilla
Dash of salt
1 C of milk or milk alternative
2 Tbsp of Coconut Oil
3 eggs or flax eggs (3 Tbsp flax in 9 Tbsp water; if you choose this option, mix first and let sit while blending other ingredients and add last)
Tools: food processor if you’d like, but bowl and whisk will suffice!
Allow pan to heat while mixing ingredients.
Mix dry ingredients first, wet ingredients separately and then add the wet into the dry.
Dollop on pan for pancakes, or if you have a waffle iron, you can use the same recipe for them!
Top them with your faves! I personally love blueberries, sunflower butter and cacao nibs :)
