Breakfast Chia Cookies (GF, DF, V)


  • 2 C of Oats or Oat flour

  • 1/3 C Coconut Sugar

  • 1/4 C Chia Seeds

  • 1/4 C Cacao Nibs

  • 1 tsp baking soda

  • 1/2 tsp salt

  • 1 tsp vanilla

  • 1/2 C of Peanut Butter

  • 1 C Coconut or Almond Milk

Tools: Bowl and whisk


  1. Preheat oven to 350 degrees

  2. Mix all ingredients in a bowl in the order listed. Let the batter sit for a few minutes when done so the chia seeds have time to swell.

  3. Oil a cookie sheet or use parchment paper to line.

  4. Drop batter on pan in desired size of cookies.

  5. Set the cookies to bake for 20 minutes.
