Banana Coconut Bread Recipe (V, GF, DF)

Ingredients:

  • 1/2 C Coconut Flour
  • 1 3/4 C Oats or gluten free flour
  • 3 Tbsp Flax seeds
  • 1/3 C Coconut Sugar
  • 2 tsp Baking Soda
  • 1 tsp Baking Powder
  • 1 tsp Salt
  • 3 Ripe bananas
  • 2 tsp Vanilla Extract
  • 1/2 C Water
  • 2 tsp Apple cider vinegar
  • 2/3 C Coconut Oil

Tools: food processor

Instructions:

  1. Preheat oven to 350 degrees
  2. Place all the dry ingredients in the processor and blend for 30 seconds to mix
  3. Heat the ghee or coconut oil in a pan or microwaveable bowl
  4. Toss in the chopped bananas, vanilla, water, apple cider vinegar and coconut oil and blend until smooth.
  5. Pour mixture in a lightly greased bread pan (or line with parchment paper) and bake for 50 minutes or until the top is golden brown!
